Recipe: Sunchokes

Try this recipe from a co-op member!

 Brenda A. says to try your sunchokes this way:

Wash/scrub & cut into small pieces.
Toss with olive oil, salt & pepper.
Bake in a 400 degree oven for 35 minutes. 
They tasted just like home fries, maybe not quite as firm.
They are supposed to be good for blood sugar levels.
