Hummus - BASICS Recipe
This recipe was developed by Quabbin Harvest board member Cristina Garcia. This healthy hummus is made with ingredients that are part of our BASICS program, which offers pantry staples at very affordable prices.

Hummus is great as a dip or sandwich spread. Try adding a small cooked beet to the food processor for a hard to resist fuschia variation. A good drizzle of extra virgin olive oil, and a sprinkle of paprika and sesame seeds are traditional ways to top your hummus. Cook up a cup or two of chickpeas at a time to have extras for the week.
Yield: 8 2oz-servings (2 cups total)
1 1/2 cups cooked chickpeas (1 strained 15oz can or 4oz dry)
1/3 cup tahini
2 small cloves garlic, minced (.25oz)
1 1/2 tablespoons lemon juice
1/4 cup neutral cooking oil (such as safflower or anything the color of vegetable oil)
1/4 cup water or chickpea cooking liquid
Salt, season to taste
Combine all ingredients in a wide bottomed bowl and mash with a potato masher until creamy (warmed chickpeas are a bit easier to mash).
OR
Combine all ingredients in the bowl of a food processor. Pulse until creamy.
