Quinoa with Tuna and Peas - BASICS Recipe

Creamy Quinoa with Tuna and Peas

The possibilities here are endless. Add leftover cooked chicken, fish or veg. Try adding a few pinches of curry powder to the water for the quinoa and then substitute coconut milk for the milk. The protein in quinoa will power you through your whole afternoon. 

 

ield: 4 servings 

5 oz (1 cup) quinoa

2 cups water

1 tablespoon butter  

3/4 cup milk

2 oz (1/2 cup) cheese, grated 

5 oz (1 heaping cup) frozen peas

1 5-oz can tuna 

 

Rinse quinoa. Bring water with quinoa to a boil, reduce to a simmer and cover. Cook for 12-15 minutes. Stir in butter, milk, cheese, peas and tuna. Season to taste

 

OR

 

Add rinsed quinoa and water to an appropriately sized slow cooker. Cook on low for 2 - 2 1/2 hours. Stir in butter, milk, cheese, peas and tuna. Season to taste.
