Maple Pudding - BASICS Recipe

Maple Pudding

Delicious with a dollop of whipped cream, a shake of maple sugar and a drizzle of maple syrup.
Yield: 4 servings
2 cups whole milk
1/3 cup maple syrup
2 large egg yolks
3 - 4 tablespoons cornstarch (depending on desired thickness)
1/8 teaspoon salt
2 tablespoons butter
1/2 teaspoon vanilla extract (optional)
In a medium bowl, whisk together milk, maple syrup and yolks. In a medium heavy-bottomed pot, combine salt and cornstarch. Add liquids to pot while whisking.
Over medium-low heat, whisk constantly until pudding coats the back of a spoon, 10-12 minutes.
Whisk in butter and optional vanilla. Transfer to a bowl and press plastic wrap to pudding surface to prevent skin from forming. Chill for 2-3 hours. Whisk to smooth before serving.
(The risk with only occasional whisking or a very thin pot is scrambling bits of yolk. If your pudding contains these lumps, pour through a fine mesh strainer before chilling.)
