Peanut Noodles - BASICS Recipe

 

This recipe was developed by Quabbin Harvest board member Cristina Garcia. This delicious dish is made with ingredients that are part of our BASICS program, which offers pantry staples at very affordable prices. 

 

Peanut Noodles

Feed your family the BASICS

Serve warm or chilled. Add other veggies or top with shrimp, sliced chicken breast or steak. Sauce will keep in the fridge for up to three weeks and is great on salads or as a dipping sauce. 

 

 


Yield: 5  1 1/2 cup servings  


1/2 cup smooth peanut butter 
1/4 cup tamari or soy sauce 
1/3 cup water
1 teaspoon ground ginger 
1 medium garlic clove, minced 
1 tablespoon lime juice 
1 tablespoon rice wine vinegar 
1 1/2 tablespoons toasted sesame oil 
1 1/2 tablespoon honey 
1/2 teaspoon dried hot red pepper flakes 

16 oz pasta (spaghetti, udon, soba or rice noodles) 

1 large carrot, (approx. 6 oz) grated or finely chopped (2 cups)
1 small beet, (approx. 3oz) grated or finely chopped (1 cup) 


Whisk first ten ingredients vigorously or use a standard or immersion blender (if you’re using a blender garlic can be used whole). 

Cook pasta according to package directions. If you’d like to serve  noodles chilled, rinse well with cold water (gluten free pasta needs to be rinsed for hot or cold preparation). 

Toss noodles with sauce to coat. Top with carrots and beets.
