Recipe: Pumpkin Muffins

  • 1.5 cups whole wheat pastry flour
  • 1 cup whole wheat bread flour
  • 1/2 cup wheat bran
  • 2 tablespoons sunflower seeds
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 3/4 teaspoon nutmeg
  • 3/4 cup raisins or dried cranberries
  • 2 cups canned or home cooked pureed pumpkin (or squash or sweet potato)
  • soymilk to moisten
  1. Preheat oven to 400 F
  2. Stir together all ingredients except pumpkin and soymilk
  3. Stir in pumpkin and enough of the soymilk to make a thick moist batter
  4. Fill lightly oiled muffin tins 3/4 full
  5. Bake 15 - 20 minutes or until done
  6. Makes 10 - 12 muffins
