Recipe: Pumpkin Muffins

- 1.5 cups whole wheat pastry flour
- 1 cup whole wheat bread flour
- 1/2 cup wheat bran
- 2 tablespoons sunflower seeds
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cloves
- 1 teaspoon cinnamon
- 3/4 teaspoon nutmeg
- 3/4 cup raisins or dried cranberries
- 2 cups canned or home cooked pureed pumpkin (or squash or sweet potato)
- soymilk to moisten
- Preheat oven to 400 F
- Stir together all ingredients except pumpkin and soymilk
- Stir in pumpkin and enough of the soymilk to make a thick moist batter
- Fill lightly oiled muffin tins 3/4 full
- Bake 15 - 20 minutes or until done
- Makes 10 - 12 muffins
