Recipe: Moroccan Carrot Salad

from Cooking Club of America’s Vegetable Creations


2 tablespoons lemon juice
1 tablespoon orange juice
1 tablespoon honey
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon cinnamon
3 cups grated carrot


Combine lemon juice, orange juice, honey, cumin, salt and cinnamon in a medium bowl.
Mix well.
Add the carrots.
Toss to combine.
