Recipe: Nina’s Pasta with Brie
PASTA WITH BRIE
- 8 oz. Brie
- ¼ cup olive oil
- 1 ½ cups diced fresh tomatoes (about 6)
- 2 tsp. garlic- chopped
- 1 tbsp. parsley
- 4 leaves fresh basil
- 1 ½ tbsp. toasted pine nuts (or leave this out)
- 1lb. pasta
- Salt, pepper
Take rind off brie. Heat oil and add tomatoes, garlic, parsley, and basil. Sauté for about 5 minutes. Add Brie and pine nuts, and sauté on low for about 3 minutes, or until cheese melts. Add salt and pepper to taste. Serve over cooked pasta. Enjoy !!!
You can use goat cheese instead of brie- just wait to add it till after you pour the sauce over the pasta. You can also add sautéed sundried tomatoes if you make this in the winter.
