Parsley And Raw Mushroom Salad With Chive Vinaigrette 


Chive vinaigrette:

  • 2 Tbsp. fresh lemon juice

  • 1/4 c. finely snipped fresh chives

  • 1/4 c. extravirgin extra virgin olive oil 

  • 1/2 tsp grnd pepper

  • 1/4 tsp salt

  • 4 c. flat leaf parsley leaves (about 2 good sized bunches)

  • 8 cremini mushrooms very thinly sliced

  • 1/4cup grated parmesan cheese



  1. Whisk all vinaigrette ingredients together till well blended.

  2. In a large bowl combine parsley and mushrooms and toss with vinaigrette.

  3. Sprinkle with parmesan cheese.
