Recipe: Coconut Pineapple Rice


 Coconut Pineapple Rice

A light and sweet rice that tastes great. Makes a nice pairing with curried fish or chicken or black bean patties.


2 cups long grain rice
1 cup coconut Milk 
1 cup water
1 cup pineapple itdbits in 100% Pineapple Juice
1/4 cup shredded coconut, toasted if desired
2-3 tbsp cilantro, chopped



Add rice to pot and rinse with warm water until water is clear.
Next add 1 cup water and 1 cup of coconut milk to medium saucepan.

Cook about 20-25 minutes or until rice is cooked through. 

Once rice is done, add the 1 cup of pineapple, shredded coconut and cilantro if desired. Toss well and serve while still warm.

Serving Size: 1/2-3/4 cup
